Wild Rice Casserole With Pork Chops
1 C wild rice
1/3 C celery, chopped
1 can beef consommé
1 can cream of mushroom soup
1 small onion, finely sliced
4 pork chops, fried
1 can mushroom pieces
Rinse rice with water and then mix with the consommé. Let stand overnight.
Sauté onion and mushroom pieces in butter.
Steam celery in saucepan until tender.
Mix onion, celery and mushrooms with rice.
Add mushroom soup.
Put mixture in casserole dish and top with fried pork chops.
Bake 1 hour at 350°.
Serves 4.
